Apple Cake

It tastes as good as it looks, this is a scrumptious cake simple enough to make and a must to try!

This is gluten free and there is no refined sugar! Apple and cinnamon are a heavenly combination...

All you need, apart from the ingredients, is a food processor.

 

Serves: 10

Prepapration time: 20 minutes

Cooking time: 25 + 20 minutes.


Ingredients:

  • 2 medium eating apples

  • 1 tbsp fresh lemon juice

  • 1 tsp groud cinnamon

  • 3 eggs

  • 120gr butter at room temperature

  • 200gr ground almonds

  • 50gr self raising brown flour

  • 100gr large, soft pitted dates - finely chopped

  • 1tsp vanilla extract

  • 1tsp baking powder

  • Flaked almonds.


Method:


Pre-heat the oven to 190 degree/fan 170 degree C.

Grease or line with baking paper a round loose-based cake tin.


Core the apples and cut each one into12 wedges each without the skin.

In a medium bowl toss them with the cinnamon and the lemon juice.


Place the eggs, butter, ground almonds, the flours, half the dates, vanilla and baking powder in a food processor and blits until smooth.

Remove the blade and stir in the rest of the dates.


Spoon the batter into the prepared cake tin and spread it out to the sides.


Top with apple wedges placeng them in circle quite close to each other then bake for 25 minutes.






Remove from the oven, sprinkle with the flaked almonds and cook for further 20 minutes, until the cake is cooked trhough, the apples are tender and the nuts are golden.






Cool in the tin for 30 minutes then remove and put on a serving plate.

Cut into slices and serve.
