Banana & Blueberry Bread
Try this "sweet bread" made with banana and blueberry. It has the consistency of the bread but it is sweeter and moist.
Easy to prepare with a longer cooking time in the oven.
It makes a great couple with a cup of coffee or tea either in the morning or in the afternoon.

Preparation time: 15 minutes
Cooking time: 1hour.
Ingredients:
3 ripe bananas
1 pack blueberries
300gr flour (I used the self raising and you can also use a gluten-free one).
180ml milk (I used a no-dairy milk)
1 egg
1 tsb vanilla
3 tbsp vegetable oil
50gr coconut sugar (or any sugar you like)
1 tbsp baking powder
1 tsp salt
1 tbsp butter for greasing the pan
1 tbsp flour for blueberries and pan.
Method:
Preheat the oven to 180 degrees C. Grease a loaf pan with the butter and sprinkle a little flour on top.
Rinse the blueberries and sprinkle them with a bit of flour ( so that they won't stick to the bottom).

In a medium bowl mash the bananas with a fork or you can use a blender. Add the oil, milk, vanilla extract, egg and whisk well. Add the sugar and whisk again.

In another bowl mix the flour, baking powder and salt. Mix the flour mixture with the wet mixture with a wooden spoon or a spatula. Add the blueberries and mix so that they are evenly distributed in the batter.

Pour the batter in the prepared baking loaf pan and bake for about an hour. (You can insert a toothpick until it comes out clean).

Remove from the pan and let cool before slicing it.
