Blueberry, Lime and Polenta Cake

It tastes really good like a real homemade cake and it is super moist! It is also gluten-free.

Preparation time:20 minutes
Cooking time: 30 minutes.
Ingredients:
75 gr almond flour
75 gr polenta
1tsp baking powder
100gr butter (grass-fed)
100gr sugar (coconut sugar)
3 eggs
Zest and juice of 3 limes
200gr blueberry
Icing sugar, pistachios and almond flakes to decorate.
Method:
Prehea tthe oven to 160 degrees C. In a medium bowl mix together flour, polenta and baking powder.
Cream the butter (at room temperature) and the sugar until light and fluffy. Beat in the egss one at a time and stir well. Add in 1 tbsp on the polenta mixture with each eggs.
Fold in the remaining polenta mixture the zest of 3 limes and the blueberries. MIx it up.
Line with parcement paper a round cake tin and pour the batter in.
Bake for 30/40 minutes then let it cool outside of the oven for 10 minutes before decorating.
With a skewer prick little holes in the cake and pour in the lime juice.
Remove form the tin and place on a serving plate then dust the top with icing sugar and decorate with the almond flakes, some pistachios and a few lime slices.
