This is an easy dish to make, again healthy and very tasty.
The peppers come out just a little crunchy and release all their flavour. The smell of the herbs is astounding...
Garden (easy) Chicken
Servings: 4 Preparation time: 20 minutes Cooking time: 40 minutes.
4 skinless chicken breasts
Herbs de Provence - Thyme, Origano, Majorana, Rosemary ( if you do not have them, use rosemary).
2 cloves garlic
1 green, 1 red, 1 yellow papper
One hadful garden peas
400 gr can chopped tomatoes
Salt and pepper
1/2 tsp turmeric
1 tsp sesame seeds
Basil leaves for garnish
Rub the chicken breasts with the herbs and let it marinade for a few hours in the frisge.
Peel and finely chop garlic and onions. Wash all the vegetables then cut the courgettes and cut the peeprs into wide strips.
Heat the oil into a frying pan, add the chicken and fry for 5 minutes. Turn over and fry for another 5 minutes. Remove form the pan and keep warm.
Add some oil, onions, garlic, courgettes peas and peppers to the pan. Cook for 10 minutes stirring until the vegetables soften. Add the tomatoes with the juice, turmeric and sesame seeds and season.
Cover and simmer for an additional 10 minutes. Stir in the parsley and put the chicken on top. Cover and simmer for another 10 minutes then garnish with basil and serve.
Rice or couscous make a delicious side to this dish.
