
Glazed Carrots and Parnsnips
This could be a last minute side dish. You may not always have parsnips but it is easy enough to find some carrots in your cupboard at any time.
Very easy to prepare and not long to cook it. If you like the sweetness of the carrots, slightly enhanced by the honey, you will really enjoy this one!
Serves: 4
Preparation time: 5 minutes
Cooking time: 30 minutes.
Ingredients:
4 medium carrots cut length way into medium size sticks
2 parnsnips cut length way into medium size sticks
1tbsp honey
20gr butter (grass fed)
Fresh chive chopped (to taste)
1 tbsp dry origano
1tsp sesame seeds
salt, fresh ground black pepper.
Method:
Scrub the carrots and the parnsnisps, trim down their tops and wash them.


Put them in a wide shallow pan and add 500ml of water (to barely cover them).
Add honey, salt , origano, sesame seeds, pepper and butter cut into little pieces.
Cover with a lid and bring to boil then lower the heat and simmer until they are tender.
Uncover the pan, increase the heat and boil to reduce the liquid stirring and shaking the pan until the carrots and parnsnips start to catch on the base on the pan.
Allow them to colour slightly here and there.
Add the herbs, toss well and serve immediately.
