Grilled Salmon Cubes


This easy as well as nutritious dish is also a quick one to make and a tasty one to try!



Serves: 2

Preparation: marinade overnight the salmon - 10 minutes for spinach

Cooking: 15/20 minutes for salmon,10 minutes for spinach.


Ingredients:

  • 2 salmon steaks

  • 2 green onions - chopped

  • 2 garlic cloves - minced

  • 1 tbsp butter (grass-fed)

  • 2 tbsp flour

  • 200gr fresh spinach

  • 200ml milk (rice milk)

  • Fresh nutmeg.


Marinade: 2 tsp lemon juice - 1 tsp paprika - pinch of salt.



Method:


Combine the lemon juice, paprika and salt in a large bowl; cut the salmon steaks into small cubes cover and marinate them overnight (or at least a few hours) in the fridge.



Add some oil in a pan over medium heat and sauté the onion (1 onion) and garlic (1 clove) until slightly tender. Add the salmon cubes and continue to cook for another 10 minutes.

Transfer to a serving plate and serve with creamed spinach.











Spinach.

Melt butter in a medium-size pot over medium heat. Whisk in the flour and cook for a couple of minutes. Add in one onion and cook for a few minutes then add the garlic (1 clove) for 1-2 minutes.


Pour in the milk whisking constantly for about 5 minutes until you can see that the sauce is getting thick. Season with salt, pepper and nutmeg.



Melt some more butter in a separate pan and add the spinach in batches, wilting each batch before you add another one.

Add the spinach to the sauce stirring gently to combine. Sprinkle with parmesan cheese.
