Super easy to make, good for any occasions, can become a great Halloween treat especially for kids.
Use some Halloween shape biscuit molds and enjoy using some food colouring to brighten up your and your kids night!

100 gr grass fed butter (room temperature)
80 gr coconut sugar
180 gr flour
1 lemon zest (and/or 1 orange zest and 1tbsp milk/dark chocolate chips)
1/2 tsp baking powder
1 pinch salt
1 tsp vanilla.

Beat the butter and the sugar with the electric mix in a medium size bowl till they become creamy.
Beat in the egg.
Add the flour, the zest (I used the lemon zest with half of the ingedients and the orange with the chcocolate chips with the other half), baking powder, salt, vanilla until you have a ball of dough.
The dough will be soft but you can use some flour to help you roll it and cut later on.
Cover and put in the fridge for 2 hours.
Pre heat the oven to 180 degreesC.
Roll the dough to 1/2 cm thick and cut out shapes. You can use any mold you have but for the occasion I used the Halloween ones. (yuo can now paint them if you like with any food colouring).
Sprinkle with sugar and bake for 10-12 minutes until the edges are light brown.
Cool on a wire rack then decorate to your taste or according to the occasion.
