Herbed Salmon

Here is another simple, easy but tasty salmon recipe.

Using wild salmon is nutritionally better; wild salmon has half fat than farmed salmon and using fresh herbs really enhances the taste of the dish.

 

Servings: 2

Preparation: 15 minutes

Cooking time: 15 minutes.


Ingredients:


  • 2 fresh or frozen skinless wild Alaskan salmon fillets, rinsed and patted dry

  • 1 fresh organic lemon cut in half

  • 1 handful of chopped fresh origano

  • 1 handful of chopped fresh cilantro or parsley

  • 1-2 handful of chopped almonds

  • 2 garlic cloves, minces

  • 2 tsp lemon juice

  • Salt and ground black pepper.


Method:


Pre-heat the oven to 180C degrees.

Rub each side of the salmon with a lemon half and squeeze gently to release the juice, then set aside.


In a thick zip storage bag combine the origano, cilantro, almonds, salt and pepper; add the fillets, shake well to coat the fish.



Cook the salmon with the garlic and lemon juice in the oven for 15 minutes. Careful not to overcook.














Transfer to a serving plate, sprinkle with fresh parsley, drizzle some olive oil on it and add more fresh ground pepper if you like.

Serve with any greens of your choice or with some steamed cooked potatoes sprinkled with chopped parsley and olive oil.
