Sweet potatoes are high in vitamins, good source of magnesium which is the relaxation mineral.
They contain vitamin A and B6 and phytochemicals (quercetin and chlorogenic acid) considered effective in fighting cancer.
Once I ran out of baking potatoes but had some big sweet potatoes and decided to make some Jacket potatoes with them.
The result (well, according to me and and my family) was a real score!
I recommend you try them not only for the benefit of this food itself but because it is another flavour you can add to your cuisine.
I tried these 2 toppings: mushrooms and blue cheese and vine tomatoes and ricotta cheese.
Preparation time: 20 minutes
Cooking time: 45/50 minutes.
1 or 2 BIG sweet potatoes for each person
mixed mushrooms (Portobellos, Chestnuts, wild mushrooms)
Blue cheese (Danish Blue or Stilton)
Vine tomatoes, one pack
Butter, olive oil, salt, pepper
Fresh herbs: chive, parsley, thyme (or anything you fancy).
Wash the potatoes, pat dry them with some kitchen paper and stuck a fork half way through the skin in different locations so the heat can come out when they are baking.
Microwave them for10 minutes first and then bake them in the oven for about 40/45 minutes dependng on their size.
Once ready let them cool outside of the oven.
When the potatoes are baking put the tomatoes also in the oven for about 20 minutes then let them cool, peel them, take out the seeds and smash them with a fork then mix them up with the ricotta cheese (quantity of the cheese should follow your taste. Add a pinch of salt, pepper, olive oil and some finely chopped herbs.
Wash and cut the mushrooms into thin slices. Heat some oil in a frying pan, add some crushed garlic and the mushrooms. Cook until the water released by the mushrooms has been absorbed then take out of the heat. Season with salt, pepper, herbs and mix with the cheese cut into small cubes. Let the cheese melt.
Cut the potatoes lengthway and squash a little bit the sides, so yuo have a pocket to fill up with the toppings. Put some butter, salt and pepper, add the toppings on top and heat up in the microwave for 1/2 minutes.
Prepare all the toppings when the potatoes are baking.
