This recipe comes after several attempts to make a gluten-free bread which is easy to make and has a good taste.
Preparation time: 15 minutes - Cooking time: 25 minutes
1/2 cup all purpose gluten-free flour
1/2 cup buckwheat flour
1/3 cup almond flour
1/3 cup brown rice flour
1 tbsp coconut flour
2 tbsp coconut oil
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1tbsp apple cider vinegar
1 handful of mixed seeds
1/2 cup rice or almond milk
Preheat the oven at 200 degrees fan and cover a baking tin with baking paper.
In a big bowl put all the flours, coconut oil, salt, bakitng soda and the cinnamon and mix with a whisk.
Add the eggs, the vinegar, the seeds. Mix again adding the milk a bit at a time until you get a smooth mixture.
The mixture must not be neither too dense nor too watery.
Cook in the oven for 25 minutes. Take out and let cool.
Keep in an airtight container, After a couple a days it looses freshness but you can toast it sliglty and it is still tasty!
