One-Skillet Fish

Here another easy, healthy dish you can even serve if you have some guests.


Serves: 4

Preparation time: 15 minutes

Cooking time: 20 minutes.


  • 4 white flashed fish (I used cod) cut into smaller pieces

  • 1 white onion (thinly sliced)

  • 1 organic lemon (cut into round slices)

  • Cherry tomatoes

  • Artichokes hearts (can use the ones in a jar with oil......

  • 1 courgette (cut in into thin round slices)

  • 1 handful of pitted green olives

  • 1 handful capers

  • Dry origano and dry dill

  • Salt and freshly ground pepper

  • 1/2 glass of dry white wine

  • Olive oil.


Put all the cut ingredients (leaving the fish aside) in a skillet pan.

Add dry origano and place the fillets on top.

Add the dill, season, add the wine and the oil and the lemon slices on top.

Cook on stove-top, covered over high heat until it startsto bubble.

Reduce th eheat to medium-olow and continue to cook for about 15-20 minutes until the fish is ready.
