
One-Skillet Fish
Here another easy, healthy dish you can even serve if you have some guests.
Serves: 4
Preparation time: 15 minutes
Cooking time: 20 minutes.
Ingredients
4 white flashed fish (I used cod) cut into smaller pieces
1 white onion (thinly sliced)
1 organic lemon (cut into round slices)
Cherry tomatoes
Artichokes hearts (can use the ones in a jar with oil......
1 courgette (cut in into thin round slices)
1 handful of pitted green olives
1 handful capers
Dry origano and dry dill
Salt and freshly ground pepper
1/2 glass of dry white wine
Olive oil.
Method

Put all the cut ingredients (leaving the fish aside) in a skillet pan.

Add dry origano and place the fillets on top.
Add the dill, season, add the wine and the oil and the lemon slices on top.
Cook on stove-top, covered over high heat until it startsto bubble.
Reduce th eheat to medium-olow and continue to cook for about 15-20 minutes until the fish is ready.
