Pasta Salad
Updated: Jul 24, 2020
This is a super quick cold pasta salad. Suitable especially during the Summer and can be enjoyed as a main or as a side dish. You can enjoy it during a pic nic, on the beach, or during a BBQ.
Ingredients:
Pasta (penne or fusilli. Pasta can be brown or gluten free if you prefer).
2 cloves of garlic
2/3 big ripe red tomatoes
Tuna (1 tin of tuna in olive oil)
Black olives
Capers
Salt, pepper. basil, parsley, origano, chive, olive oil.
Instructions:
Boil some water, add the salt and cook the pasta for the amount of time advised ( I prefer it 'al dente').
Once ready, drain it and keep it under cold water for some seconds in order to stop the cooking and keep it firm. Add some olive oil and stir so it does not stick.
In the meantime in a bowl, first, wash and cut the tomatoes into small pieces (discarding the seeds) and season with some salt and olive oil so they start producing some juice. In another bowl, crashed the garlic and then add the tuna (without the oil), olives, capers and the chopped herbs.
Add the tomatoes and the cooked pasta and some extra seasoning: salt, pepper and olive oil.
And... it is ready!
Put it in the fridge for at least a few hours. If you are going to have it for lunch, prepare it the previous night and leave it to cool overnight.
Notes
Take out of the fridge about 30 minutes before to let the ingredients warm up a little bit and reach their best flavour.
As the ingredients are just a few, make sure the quality of the products is good and the taste will follow....
Also, try to add some sesame and fennel seeds as a last touch.
