The pinkish colour is not about anything artificial but it is due to the combination between white potatoes and sweet potatoes.
I find this side dish really nice and the use of rice milk, instead of cow milk, make it fells a little bit lighter.
Preparation time: 10 minutes
Cooking time: 25/30 minutes
White and Sweets potaotes (1 sweet potatoes every 4 mwdium white ones)
1 glass of rice milk
1 knob butter
Salt, black pepper, nutmeg
Peel the potatoes, wash them and cut them into big chunks.
Boil them into a big pan of salted water for 15-20 minutes.
Drain them and put the pan back on low heat. With a masher, mash them and then start adding some warm milk. Pour the milk in a little bit at a time and keep masing them.
You will still have some little lumps but if you prefer a very smooth and silky mashy potatoes dish use an electric whisk on medium speed until you get the desidered softness.
When ready add some freshly ground black pepper and grated nutmeg and stir with a wooden spoon.
Add the butter and the chive and stir again..... really yummy!!!
