Rice Pudding

Rice pudding is a sweet, rich and easy to make dessert your children will also like it.

This is a slight different version with coconut milk and cinnamon but still very enjoyable...

I prefer it warm but it can be tasted also cold.

Serves: 4 Preparation time: 5 minutes Cooking time: 30 minutes


Ingredients:


  • 400ml coconut milk

  • 300ml dairy milk

  • Zest of 1 orange

  • 1tsp cinnamon

  • 1tsp vanilla extract

  • 2 tbsp coconut sugar

  • 150 gr pudding rice

  • 1 mango or other fruit of your choice or some fruit jam to serve it with.


Method:


Place the coconut milk, the milk, orange zest, cinnamon vanilla and sugar in a saucepan.

Bring to a simmer and then add the rice.


Stir well, cover with a lid and simmer gently, stirring every now and then for about 30 minutes until the rice is tender.


Leave to cool slighlty and serve with the fruit peeled and chopped or with some jam on top.


Note:

Try to melt some chocolate (I prefer it dark), with some non dairy milk in a littel sauce pan and pour on top.
