
Ricotta & Lemon Spaghetti
Believe me, this is a very easy one and you can prepare the sauce in 5 minutes!!!
It is a delicate but absolutely flavoursome pasta dish.
Serves: 2/3
Preparation time: 5 minutes
Cooking time: 15 minutes.
Ingredients:
80-100gr of spaghetti per peson
200gr ricotta cheese
1 garlic clove, crushed
2 handfulls of bay spinach leaves
1 handful of black pitted olives
4-5 stripes of sun dried tomatoes cut into small pieces
Zest of one organic lemon
Parmesan cheese
Fresh herbs of your choice finely chopped and dry origano
Olive oil
Salt and fresly ground black pepper.
Method:
Cook the pasta in salted boiling water following the packet instructions. During the last 2/3minutes, add the spinach leaves and then drain them together with the pasta.
In the meantime in a medium bowl combine the ricotta (smash it a little with the back of a fork), the parmesan, some oilve oil, the garlic and the lemon zest. Add some salt and stir well.


Put the sauce in a pan on a low heat, add the olives and tomatoes and the herbs and cook for a few minutes. Add the cooked pasta (and spinach) and toss for another few minutes.
Ready! Serve with some fresh ground pepper and a few sprinkles of lemon zest on top.
