Ricotta & Lemon Spaghetti

Believe me, this is a very easy one and you can prepare the sauce in 5 minutes!!!

It is a delicate but absolutely flavoursome pasta dish.


Serves: 2/3

Preparation time: 5 minutes

Cooking time: 15 minutes.


  • 80-100gr of spaghetti per peson

  • 200gr ricotta cheese

  • 1 garlic clove, crushed

  • 2 handfulls of bay spinach leaves

  • 1 handful of black pitted olives

  • 4-5 stripes of sun dried tomatoes cut into small pieces

  • Zest of one organic lemon

  • Parmesan cheese

  • Fresh herbs of your choice finely chopped and dry origano

  • Olive oil

  • Salt and fresly ground black pepper.


Cook the pasta in salted boiling water following the packet instructions. During the last 2/3minutes, add the spinach leaves and then drain them together with the pasta.

In the meantime in a medium bowl combine the ricotta (smash it a little with the back of a fork), the parmesan, some oilve oil, the garlic and the lemon zest. Add some salt and stir well.

Put the sauce in a pan on a low heat, add the olives and tomatoes and the herbs and cook for a few minutes. Add the cooked pasta (and spinach) and toss for another few minutes.

Ready! Serve with some fresh ground pepper and a few sprinkles of lemon zest on top.
