Roasted Peppers and Goat Cheese Pasta

Roasted Peppers and Goat Cheese Pasta
Servings: 4 Preparation Time: 15 minutes Cooking Time: 45 + 10 minutes
Ingredients:
Pasta penne 80/100 gr per person
2 peppers, 1red and 1 yellow
2 courgettes
2 tbsp cashew nuts
1 tsp sesame seeds
garlic 1 clove
100/150 gr goat cheese
Black olives (1 handful)
Herbs (fresh basil, parsley, origano)
Olive oil.
Methods:
Cut the peppers and the courgettes in half lengthway and roast them in the oven at 180 degrees for 40/45 minutes Turn them half way. Let them cool and then peel the peppers skin off.

Save some of the peppers and of the courgettes and cut it into small cubes and put the rest inside a blender together with the cashew nuts, seeds, garlic, salt, pepper, herbes and olive oil. You can add all the olives or only half of them and use the rest when you toss the pasta.
Blend until you get a creamy compost.
Set the small cubes aside.

Heat the sauce and melt in the goat cheese - cut into small pieces. Add some of the pasta cooking water to get the desired consistency.
Cook the pasta, drain it and toss it in the pan for a few minutes.
Serve warm. : ))
