Tempeh Peanut Satay Stir-Fry
Tempeh - Believed to have originated in Indonesia it is still one f the most popular fermented food there.
Tempeh is a processed soy product. It is nutritious and provides proteins. Has a chewy consistency and bears a nutty, earthy taste.
Tempeh has no cholesterol, and it's a good way to get B vitamins, fiber, iron, calcium, and other minerals.
This is a very easy way to enjoy tempeh.
Serves: 2/3 Preparation Time: 10 minutes Cooking time: 10 minutes.
Ingredients:
Sauce
1/2tsp chilli flakes
2tbsp sesame oil
3 tbsp tamari or soy sauce
3 tbsp peant butter
4 tbsp maple syrup or agave
60 ml water
Stir-fry
200gr Tempeh (cut into 2 cm cubes)
Sti-fry beggies
2 nests Noodles or rice noodle
1 handful of peanuts.
Method:
Combine all the sauce ingredients in a large bowl.
Heat 1 tbsp oil in a wok or big pan, add the tempeh and the stir-fry veggies. Cook for 7/8 minutes.
Add the sauce to the cooked tempeh and veggies. Cook for another few minutes.
Cook the noodles in salted boiling water in a separate pan as per pack instruction and then drain them.
Add them to the tempeh and toss in medium heat for 1/2 minutes.
Arrange in a bowl and sprinkle with toasted crushed peanuts.
