This is an easy and quick healthy meal. The trout is an oily fish which contrasts well the peppery rocket.
As an oily fish trout contains omega-3 fats and also has proteins and B-vitamins such as B12 and B6.
Serves: 2 - Preparation Time: 10 minutes - Cooking Time: 3 minutes
250gr of smoked trout
1 red onion diced
Parsley, 1 handful, roughly chopped
Basil, 1 handful, roughly chopped
Mint, 1 handful, roughly chopped
1tsp frech dill
1/2 cucumber, halved lenghtway
2 handful rocket leaves
1 red pepper cut into thin stripes
2 portions of mixed salad
50gr cashew nuts
Sweet Lime dressing
2 limes (juice)
1-2 tbsp fish sauce.
Heat some oil in a frying pan and add the trout fillets. Cook them for about 10/15 minutes add ing some salt and fresh dill.
Toast lightly the cashew nuts in a dry pan stirring, for a few minutes.
Wash and prepare the mixed salad, add the rocket leaves and the cut peppers, the cucumber, salt and toss all together.
Flake the cooked trout over the salad and sprinkle with the toasted cashews.
Make the dressing by squeezing the 2 limes and adding the juice to the fish sauce.
Drizzle over the dish and serve.
*The fish sauce itself is salty so do not add to much salt to the salad.
*This dish can be eaten warm, so keep the ingredients to room temperature before preparing the salad, and can also be eaten cold so let the trout cool and prepare after.
