Vegetable curry with Basmati rice and Goji berries

Serves 4

Preparation time: 10 minutes

Cooking time: 20 minutes


Ingredients:

  • 80 gr carrots

  • 80 gr courgette

  • 80 gr potatoes

  • 80 gr peas

  • 1 onion

  • 200 gr Basmati rice (steamed cooked)

  • 3 tbsp olive oil

  • 2 tsp curry powder

  • 1 glass of coconut milk

  • 2 tbsp Goji berries

  • salt, pepper, turmeric


Preparation:


Steam cook the rice (wash it well under tap water, put in in a pan add 250 ml of water, to cover it, put on a tight lid and cook until all the water has been absorbed). Heat some olive oil in a pan and add the rice and toss for a few minutes. Set aside and add the Goji berries finely chopped, stir and cover.


Wash all the vegetables and cut them into medium side pieces.

Slice the onion and fry it in a pan with some olive oil and curry powder until it softens, add some turmeric to. Add the other vegetables, the coconut milk and cook for 15/20 minutes leaving the vegetables slightly hard. Season with salt and pepper. Stir using a wooden spoon.


Put the rice on a dish with the vegetable on top or all around and serve warm.
